Pastures of Siena, made by Busti Formaggi, is a Tuscan cheese made with pasteurized sheep's milk. This semi-seasoned pecorino is produced with sheep's milk from the province of Siena, from which the name derives. The paste has a slightly pinstripe pearl white color, while the inedible rind is treated with tomato paste and, consequently, is red in color. Here it is sold in the 2.3 kg format, it must be kept in the refrigerator and consumed within 3 months. It is aged for 2 months. It is excellent to be served on the cutting board as an aperitif, accompanied by other cheeses, cold cuts, salami, honey, jams and toast.
