The Paglierina made by Caseificio Longo is a soft cheese produced in Piedmont with pasteurized cow's milk. The name of this ancient cheese derives from the fact that once the maturation and conservation took place on racks of straw and hay, which left the particular grid on the rind that characterizes it. It is a rich cheese, whose taste-olfactory characteristics are reminiscent of freshly milked milk. The paste is uniform and compact, the rind is light, dry and slightly flowery, covered with a whitish mold. The color is straw yellow, the taste is sweet and almondy, while the texture is soft but sustained. La Paglierina was awarded with the Grolla d’Oro Formaggi d’utore 2010 and with the Silver World Cheese Award 2016/2017. It is advisable to taste the product in purity, but it is also excellent used as a filling for sandwiches and focaccia.
