The natural Piedmontese Tomino produced by Caseificio Longo is a soft, uniform and compact cheese, made with pasteurized milk, salt and rennet. It has a light and dry rind, covered by a very fine white bloom, while the paste is straw yellow in color. It is distributed in molds with a special ladle, left to dry in the drying rooms and finally salted. The flavor, rich and intense, sweet and slightly spicy, reveals refined notes of hazelnut that are enhanced in all hot preparations. Here it is sold in packs of 11 single portions weighing 100 g each, it must be consumed within 1 month and stored in the refrigerator. It is left to mature for 3 weeks.
