Parmigiano Reggiano DOP made by Boni is a semi-fat hard cheese, cooked and slowly aged, produced with unpasteurized and partially skimmed cow's milk, by natural surfacing. The minimum curing time is 36 months, while the expiry is 4 months. You can choose to grate the Parmesan cheese and use it as a finishing touch for a tasty first course, or to savor it in pieces, perhaps accompanied by cold cuts, jams or honey. The rind is golden yellow, while the paste is straw yellow tending to white. The scent is really characteristic, the taste is tasty but not spicy: in a single bite you will catch one of the most typical flavors of Italian cuisine.
