The Guanciale dell'Antica Macelleria Falorni is a cured meat made exclusively with Italian pork, aged for 5 weeks with the addition of salt and pepper, until its typical dark and compact external crust is formed. Inside, however, it maintains a soft heart with a very intense flavor. It is a touch of taste that is fundamental for the realization of numerous typical dishes of Italian cuisine, starting with the most famous amatriciana, gricia and carbonara.As the name suggests, this particular cut of meat is obtained from the cheek of the pig and is crossed by lean veins of muscle, with a component of valuable fat. Although similar, it differs in its composition from lard (i.e. back fat) and pancetta (i.e. belly fat).
